Yes, I said 40 POUNDS of chicken breasts! That, my friends, is some serious meal prep!
Twice a year, I order a case of gigantic, juicy chicken breasts from Zaycon (seriously, the best chicken we’ve ever had!). It’s one of the strangest things though – after ordering online, we wait for the day and exact one hour timeslot they will be at your given location (ours happens to be a parking lot between a bowling alley and a McDonalds in south Winston), pull in between the orange cones next to a semi, tell the clipboard guy your last name, have them load the box in the back of the truck and be on your merry way. It sounds even more bizarre typing it out, but it ‘s totally legit, I promise!
In the past, I’ve marinated, shredded, created, culinated (I guess that’s not a word, but it sounds fun…)
This time around, I only froze six uncooked in balsamic and six plain cooked. The rest – got baked and chopped. Ready protein portions for salads, snacks, lunches, and dinner concoctions.
I like being prepared and keeping it easy! (Please pray our power doesn’t go out and our freezer doesn’t die!)
Now in addition to planning for this massive chicken event in my kitchen this week, I’ve also been preparing for some exciting news in my “professional” life.
I LOVE being a homeschooling mom who teaches group fitness classes at the Y, but I’ve found I’m REALLY enjoying this concept of online challenge groups as well. Connecting and encouraging women to be healthy and fit – and sharing Jesus a little bit along the way is… well… AWESOME!
So, after many, many months of prayer, I’ve taken a big step, and I’m excited to share that I’ve partnered with the company that sells at home workout programs like P90X, PiYo, T25 (and many, many more) to be an online health and wellness coach.
Hear me when I say, I am SO not a salesperson! That’s not at all what this is about for me. I really feel like God’s been leading me to pursue this idea of online fitness ministry and placing these crazy amazing opportunities in my path.
This company honestly wants to “end the trend of obesity” and are serious about helping people achieve their health and fitness goals. I love how this video explains the importance of 4 pieces that add up to the total plan. Fitness + Nutrition + Support + Incentives (and talks about preparing for the Holidays!)
The people on my team truly focus on authentic, real relationships, and I’ve already learned so much! I’ve gotten connected with Michelle Myers (of Cross Training Couture – the company that makes these super cute workout shirts with Biblically based messages) and have been so inspired by her! Having her (a woman with a seminary degree! and a pastor’s wife 🙂 as my mentor is SO exciting for me!
Obviously, there are many ways to be healthy and fit. I would never suggest that this is the only option – but I do believe that having all four pieces of the total plan in place increases your odds of success. I promise, I’m not going to be posting about products nonstop now, but you know I can’t help share a really good deal! Plus, keep your eyes open for future Challenge Groups – those are the heart of why I took on this role.
